Replacing the Ebro FOM 310, the new and improved Ebro FOM 320 allows you to monitor your oil by safe and fast analysis on site. This gives you accurate measurements on your oil quality influencing the texture, taste and appearance of a finished food product whilst avoiding the significant health issues arising from over use of oil. Oil analysis also minimises your usage by making sure you change your frying oil just at the right time.
A reliable measurement of ageing oil quality is the polar compounds content, this is accessed by the FOM 320 and displayed on the digital screen from 0-40%. Reducing the health risks caused by spent oil, the FOM 320 measures hot oil up to 220°C directly in the fryer. After selection of oil type and insertion into oil the results are given within 10 seconds.
